Dr Ranj's pakoras

On Thursday 24th September, Dr Ranj made his air fryer pakoras full of veggies. They were inspired by presenter Nikita Kanda and the team at BBC Asian Network attempting a Guinness world record for the longest line of people dunking pakoras in the world.
INGREDIENTS
1 sliced red onion
2 garlic cloves
1 tsp chopped ginger
1 tbsp olive oil
1 tsp chilli flakes
1 tsp turmeric powder
1 tsp garam masala
1 tablespoon rice flour
3 tablespoons gram flour
1 chopped handful of fresh spinach
1 chopped handful of fresh coriander
Pinch of salt
Spray of vegetable oil
METHOD
Slice the onions finely.
Use a pinch of salt on them, mix together and then squeeze out any moisture using kitchen towel.
Put in a mixing bowl and add the finely chopped ginger, garlic and olive oil.
Next, add the chilli flakes, garam masala and turmeric and stir.
Add the chopped spinach and coriander, gram flour and rice flour and mix.
Add a few sprinkles of water and stir until it becomes a thick mixture.
Divide into 8-10 portions and flatten them into small squashed balls and spray lightly with vegetable oil.
Put them into the air fryer at 200 degrees and cook for 13-14 mins. (At around 7 mins flip them over.)
Serve them with some mango chutney and yoghurt dip.
